There’s no need to panic however because it is very simple to prepare.

Note: You should know that the measurement required for your fried rice depends on how many cups of rice you would be cooking. It also depends on just how much vegetables you want present. If you would be cooking a larger quantity, then you would require more ingredients. However these are the most important ingredients when making fried rice. Here’s a step by step procedure in making your very own Nigerian fried rice.
Step 1 on How to Make Fried Rice – Make Your Chicken Stock
The very first step in making your fried rice is to steam the chicken. Add a little water to your chicken (in a pot) and let it heat for 10 minutes. Add a little more water, curry, thyme, ginger powder, seasoning cube, and salt and let it steam to form the stock. When the chicken is ready, remove the chicken from the stock. If you would be adding liver, put inside and let it cook for 10 minutes. You can choose to fry your liver and diced meat.
When you have strained your chicken, you can choose to fry it or grill it.
Step 2 – Prepare Your Vegetables
Wash all your vegetables in running water till they are clean. Peel and cut carrots into small cubes, dice your onions, remove the seeds from your green peppers and cut them into small cubes. Rinse them in hot water and then place them in a bowl of cold water. Proceed to strain out the water and keep aside.
Step 3 on How to Make Fried Rice – Cook the Rice in Chicken Stock
Parboil your rice and strain out the water. Put the chicken stock in a pot and when it begins boiling, carefully put in your parboiled rice. Add your seasoning cubes, curry powder, onions, garlic powder, any other seasoning powder of your choice and most importantly, add salt to taste. Let it cook on medium heat. Ensure it doesn’t overcook and isn’t soggy by adding little water till you get the texture of your choice. You can also use a wider pot to prevent a soggy outcome.
Step 4 – Stir Fry Your Vegetables
Get another pot of a pan. Heat up the vegetable oil then add your carrots, green peppers, diced meat/liver, peas, curry, sweet corn, seasoning cube, black pepper, shrimps and a little salt to taste. Stir fry for 1-2 minutes.
Step 5 – Stir Fry Your Rice
The next step is frying your rice in batches. So, you’ll divide your vegetables and rice into equal portions and according to the size of your pan. Add a portion of your stir-fried vegetables in a pan and rice to match. Stir fry for 2-3 minutes then remove. Make sure the pan isn’t full or overcrowded to ensure equal distribution.
Repeat till you have stirred fried all the rice.
Step 5 on How to Make Fried Rice – Alternate
You can try another method of pouring your stir-fried mix into the pot of rice and turning them all together. A lot of people try this option when they are too tired or have a large portion of rice to cook. As long as your rice isn’t soggy, it’s a great alternative.
Step 6 – Serve
